The
sugar palm main use is to produce palm sugar which is frequently
used in Asia cuisine |
Palm sugar was
originally made from the sap the coconut palms and sold as coconut
sugar. The sugar is a light golden brown paste, sold in tubs or in blocks.
Where the
natural sap is collected from cut sugar palms and boiled until a nice
sticky sugar remains. The natural sugar is poured directly into
little cakes and packaged for easy use (see photos).
It can be also
eaten as candy. Consistency is firm but slightly soft, making it more
simple to use than the inferior rock hard palm sugar some are selling.
For a quantity
of palm sugar, use a mixture of equal parts maple syrup and either
soft brown sugar or black sugar (depending whether you desire a
lighter or darker-coloured result). Palm sugar is sold in rounded
cakes, cylinders, blocks or plastic or glass jars. |
